To say you know a country, you must have tasted the typical dishes.
Visiting the “caruggi” (alleys) of the historic center of Genoa, we will discover the scents and flavors of a gastronomy combining the products of a steep and rocky land with exotic ingredients coming from foreign markets along the commercial routes of land and sea.
We will talk about the undisputed king, the extra virgin olive oil, and the uses that have been made of it over the centuries, not only in the kitchen, before becoming the essential ingredient of the most famous sauce: the Genoese pesto.
